Summertime has some of my favourite foods and recipes. I am pretty silly but I just can’t make some of my summer dishes in any other season, it just doesn’t feel right. Watermelon is a big seller at my house and my Mom made this watermelon salad years ago. I was never a big fan until this year and now I wonder why I was so crazy and didn’t like it before.
The combination of feta cheese, and watermelon is amazing, two of my favourite things separately and they head on over to flavour town when they are together! Can you tell what show I love on food network 😉
The mint adds such light fresh flavour and works so well with the feta and watermelon. Adding a little bit of salt can also bring out the juices and flavour! I prefer to add a little bit and leave it to each person to add more if they wish.
- Fresh Lime Juice
- 6 cups of cubed watermelon
- 1/4 cup of fresh chopped mint
- 1/2 cup of feta cheese
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- optional- sliced red onion
- Add watermelon, feta, mint, and red onion to a bowl.
- Mix in olive oil, lime juice, and balsamic vinegar. Add a pinch of salt if desired.
- Let sit for 10-15 minutes and serve!
